After you reach Castle Level 20, what happens to Castle Points you earn from that point on?

Frozen and you no longer can collect anymore.

OKAY.
So is there any reason to keep getting Castle Coins or do we get Permanent and one-time Rewards?

It stops being worth anything at that point. You collect the one time rewards for level 20 , then the permanent boosts and then only the daily collect after this.
