Does anyone know if the cars have to be attached to the right side, so that it looks "normal", or is merely touching and adjacent sufficient?

Cars must be attached to the back of the locomotive to produce, so yes, the right side. Touching is not sufficient.

The tracks have to be connected, so it can’t just be touching the train, it has to go on either the right (or the left side potentially, haven’t tried if anyone could confirm?)

Yes, when you go to add a car, it highlights the appropriate squares. If you don't put it there, no bonus. No alternate set ups with this one, it has to be a proper train.
