If I have 2 carousels, will I then get double the attack bonus? I get 4% for 1. will I get 8% if I build 2?

Yes. In that case, the boost stacks for each Carousel you have. This applies to every Building that offers any kind of permanent boost to your city.

Yes. Same for Contestants' Estates. I have six and the boosts are cumulative.
