For quests, simple way is delete roads and rebuild them....assuming you have enough supplies and coins...the other two ways probably is spam deco's from other ages....or use crap from GE (instead of selling to AD)
Edit: You can also see if there is some diamond happiness building in inventory that you may have won

If you mean for quests, do what BFA said.
if you mean in general, main event buildings are a great way, or GBs like Traz.
