Do the unused items and event buildings in your inventory stay the age when acquired or do they age up as you age up ?

Base buildings stay the age they were when you acquired them. If they are upgraded will the building-specific upgrade kit (at least once, and not usable if the building is already its max level), that will automatically age the building to your then-current age.

The base and complete sets stay the age you got them when they entered storage. The kit parts have no age until you use them. So kit parts in storage become the age you use them in.

Only buildings that appear in inventory as "all ages" auto age up

I do not see any "all ages" sign. I do sees some buildings have an age listed in inventory when I hover over them, and other do not. but nothing has a marking all ages.
