I know the timer for hiding eggs ends today ... but if any eggs were hidden before the timer ... will they go *poof* or can I still collect them after the timer?

You'll still be able to collect them 
If you have any hiding actions left in your counter, you still cannot hide them after the timer however

I was under the impression that both hiding and collecting eggs ended at the same time, and that you could only spend eggs in the Easter Shop after the timer ends today.

Collecting eggs are still allowed; you just cannot hide anymore eggs.
